Chicken Biryani Recipe with Shan Masala | Sania's Zaiqa

 Chicken Biryani is a classic and flavorful South Asian dish loved by millions. It’s a perfect blend of aromatic basmati rice, spicy marinated chicken, and fragrant herbs. Whether it’s a festive gathering or a family weekend meal, biryani always steals the show.

I'm Sania, and today I’m sharing a simple yet delicious chicken biryani recipe that anyone can make at home.

Ingredients:

  • Chicken – 1 kg

  • Basmati Rice – 2 mugs (medium size)

  • Shan Biryani Masala – 1 full packet

  • Yogurt – 1 cup

  • Tomatoes – 2 large, chopped

  • Onions – 2 medium, sliced

  • Ginger Garlic Paste – 2 tablespoons

  • Oil – 1/2 cup (or as preferred)

  • Green Chilies – 3 to 4

  • Lemon Juice – 2 tablespoons

  • Fresh Coriander & Mint – handful each

  • Salt – to taste (add extra if needed)

  • Red Chili Powder – 1 teaspoon (optional, for extra spice)

Cooking Method:

  1. Marinate the Chicken:

    In a bowl, add chicken, yogurt, half the Shan masala, ginger garlic paste, and lemon juice. Mix well and let it marinate for 30 minutes.

  2. Prepare the Rice:

    Wash and soak the rice for 30 minutes. Boil with salt until 80% cooked. Drain and set aside.

  3. Cook the Chicken:

    Now add marinated chicken and cook on medium heat until the chicken is tender and oil separates. In a large pot, heat oil and fry sliced onions until golden brown. Add tomatoes and remaining Shan masala. Cook until tomatoes are soft.

Layering:

Spread boiled rice over the cooked chicken. Top with mint, coriander, green chilies, and a few drops of yellow food color (optional). Cover the pot tightly and steam (dum) on low heat for 15–20 minutes.

Tips:

  • I use 2 mugs of rice and one full packet of Shan Biryani Masala.

  • If the biryani tastes less spicy even after using the full masala, you can add 1 teaspoon red chili powder and 1 teaspoon extra salt.

  • I also add a bit more oil and salt to enhance the flavor as per my family’s taste.

  • Taste before serving you can always adjust spice and salt before final dum.
